John McDonald
Director, Ingredient and Foundational Technology Platform, Land O’Lakes Dairy Foods

Bio: John McDonald has been in the food industry for over 35 years and is a highly experienced scientist and innovation leader. He received his Ph.D. in Chemistry from the University of Memphis with a focus in molecular spectroscopy. He began working for Cargill, Inc. at a corn syrup refinery immediately after graduation. At that time, Cargill was ramping up efforts to apply process analytics and chemometrics to complex food system design. Immobilized enzyme technology was relatively new in the early 90’s and John’s first project was designing an inline spectroscopic system for real-time fructose determinations for fast moving high fructose corn syrup refinery streams post enzyme treatment.

His interest in innovation leadership led him to become a Project Manager, R&D Manager, and eventually a Program Leader. He was transferred to the Cargill Global Food Research team in Wayzata, MN in 2003 where he became a Research Fellow and helped to create the Material Characterization Center with a focus on using senior-level scientists and advanced analytical technologies to design novel food systems and develop deeper understanding of ingredient chemistry. His passion at that time was in developing top-to-top relationships with the R&D organizations of strategic customers and using technological capabilities and the latest innovations to further business goals.

In 2011, John moved to Land O’Lakes Dairy Foods R&D. As a Research Fellow at LOL, his initial work was in leading the R&D organization to a deeper understanding of ingredient technology and to develop closer innovation relationships with strategic ingredient supplier partners. In 2016, he became an R&D Director and began forming the research platform - Ingredient and Foundational Technology. Today, this platform has 30 scientists, from technologists to Senior PhDs, that work in four groups, Dairy Seasonings and Ingredients, Ingredient and Information Research, Food Chemistry, and Food Microbiology. This platform is responsible for innovations in incoming ingredient technology, outbound dairy-based ingredients, material characterization, food chemistry, food safety, bio-processes, and information research.
